Happy Thursday! The recipe I tried for Pinterest Thursday this week is something I pinned from one of my favorite bloggers, Ashley from
Adventures of Newlyweds. This combines several of my favorite things all together -- I mean, who doesn't love sweet potatoes?!
Anyway, here's the recipe from Ashley:
Pork Sweet Potato Quesadillas
1/2-1lb ground pork
1 medium sweet potato (I used two)
1 bunch scallions diagonally sliced
3 tbsp butter
1 1/2 tbsp chile powder
3 large garlic cloves, minced (I used garlic powder, to taste)
1/2 cup fresh chopped cilantro
1 package shredded mexican cheese
tortilla wraps (I used small flour tortillas)
salt & pepper to taste
Just a note, I never measure spices, so I did everything to taste. I also used spray cooking oil instead of butter.
Cook the pork with the chili powder and garlic in a skillet. Meanwhile put the sweet potatoes in water and microwave to soften (about 10 minutes). Scrape out the sweet potatoes and mash them up a little before adding them to the pork. Add the scallions and cook the entire mixture until warm.
Assemble the quesadillas by spreading the shredded cheese on the bottom tortilla, then spread the pork and sweet potato mixture, finish by adding more cheese before adding the top tortilla. I used shredded cheese for Handy Andy's quesadilla, but I used crumbled blue cheese for mine because I love love blue cheese.
Ashley also made a blue cheese sour cream that I tried as well. It. Was. Amazing.
Here's the recipe:
Blue Cheese Sour Cream
1/2 cup blue cheese crumbles
1/2 cup mayo
3/4 cup sour cream
salt & pepper to taste
1/4 tsp chili pepper flakes
Again, I don't really measure, so I probably added more blue cheese than listed. I also didn't have chili pepper flakes, so I used a lot of pepper. Just to let you know how good this is, Handy Andy raved about this dip and he doesn't really like blue cheese.
